Curbs and gravel bed

Hello F1 connoisseur Perhaps a stupid question, but: Why are there still Kurbs and gravel bed? The Kurbs look like a ski jump on a departure and then the car slips over the gravel bed unbrakingly. Isn’t that outdated? If everything had just been concreted, the drivers could still slow down their vehicle; but so they fly off properly… (Hamilton accident or similar) Is my thinking totally wrong? Does this have a (good) reason or would the conversion work on the routes be far too expensive? And y
