Really annoying, you have the feeling you are a novice driver. Then 2 months later in another workshop, there was a mechanic driving with me a lap. He was able to reproduce this very well and agreed that it is not typical for today’s cars that they react so “tricky” to load changes. But explained to me that it might be due to the mass flywheel that is installed on the engine, and this in combination with the 3 cylinder engine, He only said he could ask Skoda if they could extend the gear and clutch “may” to inspect these components more closely.
