After the installation of new cylinder head gasket, the engine temperature is too high in my opinion

Hello to all those who know:-) I got a new ZKD, brake discs + pads and exhaust manifold for my 206 installed 3 weeks ago. Now I drive the car already 5 years and the temperature was at approx. 130 km/h so at good 90°C. Now, after installation, the temperature goes up to 100°C and then does not go down until I slow down. Also at such 60km/h (before installation at approx. 82-85°C) the temperature is around 90°C. Workshop means is normal, however I know my car already a little longer and bes can it be because my head was supposed to have been re-planned and now a higher compression is present!? This means at least the workshop wouldn’t be bad that the Temp feelers regulate already at the right moment. Please help me!!!! Will finally drive faster and not be afraid because of the high temp. Will even try out what happens if I like to drive 180 as before. Thanks already for your opinions. Hope the description of the actual state is clear!? Thank you :-))
