Cooling water temperature phenomenon at NG

Moin municipality, the cooling water temperature on my B4 almost drives me crazy. I am at the end with my Latin and therefore ask you for help. To the problem: I have always wondered in the summer, that at higher speeds (over 130 km/h) the water temperature has fallen according to the display to approx. 80°C – 85°C. In the short distance traffic everything was normal. Fan switches on at approx. 97°C. afterwards 2x the thermostat renewed, but did not bring any significant change. In the Na From Wednesday to Thursday I drove my normal 600 km tripp again. Outside temperatures between 0°C and 6°C, I would have been glad if the display in the AI had reached the above-mentioned 85°C. 80°C to 81°C was the maximum at speeds around 120 km/h, from the ventilation came only a lukewarm vent. Did I let the car run over 150km/h the temperature went down further, which is why I left that. Then yesterday I got a new thermostat incl. All assembled again nicely, water and G 12+ mixed up and filled up, also properly ventilated when running warm and at the end some of the mix filled up again (engine cold). After that I drove the device as always warm and then went a few km on the track. What should I say . . . now it is worse than before. Not even in urban traffic the temperature is now worth mentioning about 80°C. When standing at a traffic light, though on, but as soon as the car moves and the cooler gets cold air you can watch how the needle falls to the left. On the track I then stopped at 150 km/h, because the temperature needle has fallen to 75°C. Oh yes, as soon as the fan is switched on, the temperature falls clearly visible in the system (display) and feelable (sleeps). So extreme I have not had this with any of my cars.
