Alfa 156: Engine temperature fluctuations

Hello, I drive an Alfa 156, Bj 2001, 1.8 liters. I have the problem that the engine temperature fluctuates. If it is standing (or also in traffic jam) it goes beyond the 90°C, just before the next stroke the fan starts and the temperature goes down again. While driving, the temperature is always just below the 90° mark. Usually constant just before 90°C. If you roll for a while (mountain down, 10 to 20 seconds), the temperature goes already almost run The temperature is always in the range “one stroke before and one stroke after the 90°C (mid stroke)” and on average I would estimate just below 90°C. A few fluctuations are certainly not quite unusual with a car of this year of construction, but I find this kind of fluctuations quite striking. Are easily times 20 to 30°C, right? (I don’t know how this display is scaled, I don’t think it’s linear scaling) Have also the feeling that it takes quite a long time to get warm. With a slow journey ~50km/h it takes forever, on the highway at just under 120km/h it goes within a few minutes. From the stand it does not get warm (not measurable). Know this from other cars (e.g. Fiat Punto Bj. 2000) also differently. One should not do it but for comparison it is good. They also get warm after a certain time and often have smaller engines. But now I have not been completely actionless so far: The first suspicion, clear, broken thermostat. So I changed the thermostat. But there was no improvement. I would now start a second thermostat test but would like to know beforehand if there is anyone else who has a different idea? Any sensor perhaps? Any cable that could be torn? Diagnostic device by the way shows nothing. The measuring clock has even been changed in the course of another reperature (only the measuring clock). Greetings and thanks in advance.
