Coolant temperature cold wrong

Hello, a long-term silent reader has a question 🙂 I have a 98 SL 500 (129,068), currently still in hibernation. It starts very badly since last season, sometimes it even went out at the first meters. I then changed everything at the engine in winter, where I got good – vacuum hoses, seals, LMM, candles, cables, coils, injection valves, fuel pump and filters. Especially the hoses and seals were well worth it, the old ones were f As hard as glass. But it doesn’t do better to jump on. Then I noticed that it shows a water temperature of 65° before starting (when it’s cold), in AI and in the Star diagnosis. Coolant temperature sensor exchange has not brought any change, neither does it plug off. Cold he thinks it is at 65°. When it gets warm, the temperature rises slowly to 90° approximately, which looks plausible. The oil temperature shows correctly. The resistance of the old and new sensor adapts to the Table in the WIS (3300 ohms at room temperature). On the connector of the control unit I measure 7700 ohms, when it is outside in the cold, therefore I think that the cables cannot be completely broken. How can I get it to coldly perceive the real temperature?
