Private car sales – how to avoid pitfalls ??

Dear experts, I would like to sell my good old Opel. There are some domestic/foreign interested parties who propose different methods of re-registration. There are from the interested parties these different proposals: – we conclude the contract, I get the money, hand over the car letter, dismantle the registration plates and place the car on the private parking lot of the buyer. I keep the license plate and register the car myself. I give the car bill to the buyer. – We make the contract, I get the money, hand over the car letter and bill to the buyer, who signs a declaration, to re-register the vehicle within 7 days. – We sign the contract, I get the money, hand over the car letter, dismantle the license plates and the buyer drives the car away on his tow truck. I keep the car bill and the license plates and register the car myself. After that I hand over the car bill to the buyer. Are there pitfalls in one of the three options ?? Thanks for short feedback
